From winemaker Ramon Canals in Castellvi de Rosanes just outside Barcelona we have this gorgeous bottle-fermented cava made by hand-picking only the best, most fragrant grapes from their Macabeo, Xarel'lo and Parelladas vines and selecting only the juiciest musts after pressing. Subtle fruity & floral sweetness finishes dry with a magnificent effervescence you only get from bottle conditioning. Totally, certifiably vegan to boot. Cool.
